{Crock Pot} Cilantro-Lime Fish Tacos
Ingredients
6 frozen tilapia fillets, frozen
1 lg. can Rotel, drained
1/2 tsp. minced garlic
1 1/2 Tbsp dried cilantro or 1/4 c fresh chopped cilantro
2 Tbsp lime juice
salt to taste
Soft taco shells
Directions
Place frozen tilapia fillets in the bottom of the Crock Pot.
Cover with Rotel, garlic, cilantro, lime juice, and salt.
Cook on low for 4 hours. Flake the fish with a fork and mix well with the other ingredients. Spoon into soft taco shells.

Slow Cooker Bacon Smothered Chicken
Another Six Sisters materpiece!
8
slices of bacon, cooked and cut into 1-inch pieces(I was lazy and just used bacon pieces from the jar, the whole jar)
1
onion, chopped
2
cups fat-free chicken broth
4
boneless skinless chicken breasts
1
8 oz package of fat free cream cheese
4
cups egg noodles, uncooked
2
Tbsp. dried parsley
Directions:
Cook
onions on medium heat over the stove top. Cook until they are golden brown.
Add
your chicken to the slow cooker; cover with the cooked onions and cooked bacon.
Pour your chicken broth over top. Cook on low 4 to 5 hours (or on HIGH 2
to 3 hours). About 15 min. before ready to serve, put your cream cheese in the
slow cooker.
Cook
your egg noodles as directed on the package. When the slow cooker is
ready, shred the chicken and mix well.
Then
place your chicken on your cooked egg noodles and sprinkle with dried parsley.
Serve warm.

Crock Pot Mongolian Beef

Mmmmmm...I just love six sisters stuff! This meal is easy and smells SO good while cooking!
1 1/2 pounds beef flank steak, cut into stir-fry sized strips (we used a bottom round roast because it was cheaper and it worked great)
1/4 cup cornstarch
2 tablespoons olive oil
1/2 teaspoon minced ginger
2 cloves garlic, minced
3/4 cup soy sauce
3/4 cup water
3/4 cup brown sugar
1/2 cup shredded carrots
3 medium green onions, chopped
Directions:
Spray slow cooker with non-stick cooking spray. Place cornstarch in a bowl. Coat each piece of steak in cornstarch and place in crock pot. Discard any remaining cornstarch. Combine remaining ingredients in a bowl and pour over beef in crock pot. Cook in crockpot on high for 2-3 hours or low for 4-5 hours. Serve over rice, topped with additional sliced green onions.

Slow Cooker Cheesy Chicken And Rice

- 4 boneless skinless chicken breasts(I used 2 and it seemed to be plenty)
- 1 large onion, chopped(I used half an onion)
- 1 -8 ounce box Zatarain's Yellow Rice Mix, cooked according to directions
- 1 cup cheddar cheese
- 1 - 10.5 ounce can cream of chicken soup (regular or fat free)
- 1 -15 ounce can whole kernel corn, drained (I used frozen)
- Place
chicken in bottom of slow cooker. Scatter chopped onion over top. Spoon
cream soup over top of that. Cover and cook on low 7-8 hours or on high
3-4 hours. A few minutes before serving, add in cooked rice, corn, and
cheese. Stir to combine. Serve hot.

Slow Cooker Honey Sesame Chicken
4 boneless skinless chicken breasts

1/2 cup honey
2 Tbsp low sodium soy sauce
1/2 onion, diced
2 1/2 Tbsp ketchup
1 Tbsp safflower oil or extra-virgin olive oil
3 cloves garlic, minced, pressed or grated
1/2 tsp red pepper flakes
2 Tbsp cornstarch
1 Tbsp sesame seeds(optional)
2 Tbsp low sodium soy sauce
1/2 onion, diced
2 1/2 Tbsp ketchup
1 Tbsp safflower oil or extra-virgin olive oil
3 cloves garlic, minced, pressed or grated
1/2 tsp red pepper flakes
2 Tbsp cornstarch
1 Tbsp sesame seeds(optional)
Put chicken into crock pot. Meanwhile in a separate bowl, combine
honey, soy sauce, onion, ketchup, oil, garlic and pepper flakes. Pour
over chicken and mix,
Cook on low for 3-4 hours or on high 1 1/2 – 2 1/2 hours, or just until chicken is cooked through.
Remove chicken from the slow cooker leaving the sauce. Whisk the
cornstarch into liquid in the crock pot, cover and cook the sauce on
high for ten more minutes or until it just starts to thicken.
Shred chicken or cut into bite size pieces, return to the sauce and
stir together. Sprinkle with sesame seeds if desired. Serve over rice and with your favorite green vegetable.Thursday, January 7, 2010
Beef And Mushroom Crock Pot Casserole
This is a great quick meal. I did not have any mushrooms to add, but it was good without, so those of you who do not like mushrooms chunks in your food, this is still a great recipe!!

Easy Crock Pot Chicken Tortilla Soup
I never saw the appeal of chicken tortilla soup. Tried it for the first time today, YUMMY! Very good. I am going to make a double batch next time and freeze some to see how that works out. I am very into freezer cooking right now.
Easy Crock Pot Chicken Tortilla Soup
1 packet enchilada sauce or taco meat seasoning mix
1 1/2 C water
1 can tomato sauce
1 can cream of chicken soup
2 C milk
3-4 boneless chicken breasts (again, to be cheap, I used boneless thighs, turned out great)
1 can black beans, drained
1 can corn, drained
1 can diced tomatoes (southwest style)
In crock pot, mix the enchilada/taco packet together with the water and tomato sauce. Add cream of chicken soup and milk and whisk together until smooth. Add chicken. Pour drained black beans, drained corn and diced tomatoes on top of that. Cook on low 6-8 hours.Before serving, take out chicken and shred or dice, then put back and stir it all together. Serve with sour cream, shredded cheddar cheese, avocado, or tortilla chips, or strips of tortilla for dipping.
